Looking just at undersea cables is probably a bit misleading though, since there's inland connections to consider as well. I'd guess that somewhere in the central US would be ideal, as you'd have the best middle-ground between East Asia and Europe, and the furthest connections would be to places like Central Asia and Africa that most people aren't going to care as much about.
