While not recent, I made udon. It was quite good but I still need to nail down the taste of the dashi. Will need to use real stuff next time instead of dehydrated mix.

Udon has thicker noodles, but both have different uses and broths they go with. This particular noodle is sanuki style udon which has more of a fat square shape and is very chewy, though you can say that about all udon noodles. It's a taste thing mostly.
