Most of them are turn based jrpgs with gacha methods of character/item procurment. You can compare gacha to stuff like microtransactions and lootboxes, but saying it's inherently unoriginal is wrong, because how and why would it be?
What is unoriginal is video game industry, including but not limited to japanese video game industry. The problems you have outlined, lack of soul and copy pasting of previous themes and characters is also what plagues modern anime, light novels, manga, j-dramas and pc games.
And the ones who are to blame for that are partially japanese culture which is averse to originality, but mostly the userbase who don't mind consuming same thing over and over again. And don't say that you're any different being here: I'm a touhou project fan since 2009, so I've been keeping obsessing over same characters, listening to same music tunes and replaying same danmaku stages over and over again for at least 16 years already. The idea is the same, familiar old is preferable to new.
And no, jrpgs never ever cared about worldbuilding, with exception of Trails franchise maybe. That's what made japanese games, actually japanese fiction different from the western franchises: while huge western franchises such as lotr were focused on worldbuilding, japanese devs and authors always designed characters first and slapped on the story later.
