It's because everything is ripped from official subs from streaming services automatically and official translators are allergic to honorifics, any japanese words that the viewer may be interested in learning, and translator notes to explain jokes. Can't have people interested in something from a foreign culture learning about that culture.
If you see a TL note, it's almost guaranteed to be an old fansub.

If official subs died overnight I might sacrifice myself for one show per season to help fansub, but for the average person official subs or dubtitles are good enough so it's not worth the time.
