Chobits is the only one I've really watched. I would leaf through Tsubasa and xxxHolic a lot in the bookstore as a kid just for the art though.

I need to read the CCS manga. I watched the anime for that but read the manga for Clamp's other works. I remember loving Kobato. Been planning to reread it in Japanese. Chobits was also great. I don't like them just continuing their older works though. I want a new original manga that isn't quickly put on hiatus.

CLAMP only works for me when they aren't trying to be philosophical. I just don't think they're deep enough thinkers to deliver the kinds of messages they're liable to attempt. A memorable example: Yuuko in xxxHolic will in the same breath say "あるのは必然だけ" and then emphasize how meaningful the power of choice is. She'll say that only frauds demand material compensation while using Watanuki as an indentured servant, and the writing treats her like the epitome of wisdom. If I can't get on the same page as the writer about something so fundamental then I'm already having a poor experience. Are there any other ones like Sakura that are just focused on being fun? Sakura is great.
