yeah actually i'm in the middle of a bloodborne playthrough, and it's also my favorite for the reasons you listed + the whole art style, clothing and weapons (can we go back and dress like that again??). the healing church. the gothic architecture. the theme of acquiring knowledge to become godlike and insanity. i also like lovecraft a lot. but second best would be DS1 because it feels quite magic when i play it like those sword and sorcery movies but without the kuso they often have.
so i guess you like DS2 overall? i think i was okay with it but the wanky animations really broke the immersion for me. but i can believe when they say that the old king's field team made it, it's pretty different to ds1 level-design and lore wise i think.
the only thing i remember about DS3 is the ringed city DLC. it's fine as a game but there's nothing memorable in my opinion. i think miyazaki also said he never planned for a third game and wanted to be done with it bad.
i never played elden ring but i will probably get it someday, and i never finished demon's souls for some reason so i have to restart it.
