I routinely eat food that's been left out for hours. Maybe after 12 hours I won't, depends on how wet it is.

I used to leave cooked rice sit in the rice cooker overnight if I planned on eating the leftovers the next day. It was perfectly edible but it smelled a little off.

When I cook for myself, I use pots and pans that can only fit two or three portions, so I don't make excessive amounts of soup, rice or noodles; this habit also saves energy to reheat cold food, and water to clean dishes, you could say it's eco-friendly!
