The IP having a defined identity already limits the range of stories that are appropriate to tell. It's why you'll maybe find stories about Superman having an identity crisis without powers, but never about him going through different time periods to seek wisdom in religious philosophy. Fanfictions depend on the unique mileage they gain off a pre-existing foundation. And I strongly feel that's why Touhou fanfictions are limited in the way they are.
Of course, while there is no such thing as a limit to your skill level in creative writing, that also doesn't change the fact you'd have to accommodate much harder for consistency.
Me personally, I've written some things here and there. And I even have a full novel planned out. But as far as my Touhou fanfiction idea goes, I've been stuck on the mapping phase forever. I want it to be high-concept and it's definitely getting there. But holy kuso it's been annoyingly hard to figure out piece by piece.

¥Game still has no English option, which apparently won't be out for the next month or two, so I only tried the tutorial
¥The change in format from Mystia's Izakaya allows for the visuals to have wider range of motion and details. youzi being the sprite god he is makes fantastic use of this, which makes feedback all the better in the actual game
¥I assume the game will mostly be gauntlets in a sort of beat'em up style. Given all the customization options they introduce to you at the beginning, I can see this lasting for a decent 10-20 hours
Also I didn't know apparently there was a Blooming Soul 2. Funny how that's a sequel despite seeming like such a radically different game altogether. That's out on Steam in English but I'm very biased against survivor-likes and roguelikes that can't be enjoyed without the roguelike element, so I don't think I'll be trying that

Supposedly the game will have good netcode so that's a plus, at least. I really want to look forward to this game because it's all I've ever wanted out of the touhou fangame sphere so I'll keep myself updated and try to not be too much of a negative nancy, I just REALLY hope that these 7 OCs are the only ones we're getting.
I will say though that since this is somehow
literally the only one of its' kind, they should really commit to post-launch support in the shape of character updates. Even if it's DLC, I'd buy them and I don't doubt that most people would. Never underestimate how far people are willing to go for their waifus.

Played Infinite Nocturne's demo
I think 90% of the reason I have this wish listed is because the art style and yeah, it's pretty stylish, especially in motion
I was not expecting the music to be dark synth, it is definitely a unique choice for a Touhou fan game
Outside of porn games it's definitely the most tonally different fan game I've played, with the stark visuals, dark synth soundtrack, uses of blood and body horror and the very dower serious sounding plot, it seriously creeps into Grimsokyo territories
If you're wondering how far it goes, legit spoiler for the demo: You have the option of killing Komachi or saving her by bearing the burden of the curse she's been afflicted with
The writing is quite dramatic like that but I think the actual character writing is bad
Remilia is in the demo and she does not feel like Remilia when she joins the party. She instead feels very flat and generic.
Speaking of flat, they made Yukari a loli in this game.
The game claims to be a roguelike but I think that's mostly a lie, a proper roguelike structure would get in the way of the story they're trying to tell so most of the roguelike elements manifest in the dungeon scenarios being slightly random
It's sorta like the Dark Cloud games in that regard
The actual gameplay is decent, it's aesthetically quite nice and the gameplay leverages the random elements to make the combat focus on risk and reward
There's quite a lot of tools you have that are like "Can only be done once per combat" or "Can only be done once per dungeon" or "Expends a limited and expensive resource"
I like the idea that there is elixirs you can buy/find that allow you to reset back to a point before a fight
It encourages experimenting with hard enemy encounters to figure out what equipment/skills you should try
It's basically just a fleshed out run away/quick load mechanic

Combat UI isn't even remotely close, the store page describes a real time combat system, your party members can despair mid combat a la Darkest Dungeon, etc.
I could be wrong here, but I think the original flow of the game that it's portraying is:

That old style definitely doesn't seem like it could fit the story that they're telling like you mentioned, especially since you didn't even need Reimu in your party, so maybe that's the reason why it's changed, but who knows.

Artstyle is refined to a peak, gameplay has amazing bullet pattterns, there's loads of content, and you can tell the devs put a lot of love into every last bit of it. Also goes without saying that the music and presentation are a confirmed hit. There's even netplay and other modes in the works and I can't wait to try them out. Even the story is faithful to the best parts of the ZUN style while still being original; right down to the inspiration from existing mythos or fairy-tales. Only nitpick is that the character designs are a bit too extravagant for the setting. But the way they play with the Wizard of Oz theming without being intrusive makes up for it in my eyes. Also turns out canon Touhous are partner to the new characters so even that adds to the authenticity of the whole shebang. So the fears about OCs having too much stage presence, given this game is trying to replicate ZUN style, is effectively (and thankfully) a non-concern.
Also I'm not much an expert on STGs but apparently it lifts a lot from Touhou 19 in particular. And it seems more experienced genre enthusiasts don't like how the systems in that game aren't the most cohesive in practice. So that's a minus. But I have faith at least the devs will take that into consideration and hopefully make some balance changes.
