I mean maybe you could say recency bias and all since it's being published right now, but Mizutaki has some honest to god amazing drawings. I think he captures the beauty of Gensokyo in such a delicate way that emphasizes all the unique aspects of each characters and the environment surrounding them.

If we're just talking manga it's Azuma Aya, Moe Harukawa, Ginmokusei, Aki Eda, Makoto Hirasaka, Mizutaki, and Akimaki Yuu I believe. If we extend that to everyone that's worked on official Touhou media (fanbooks, fighting games, etc) it's a few more.
Also ZUN obviously.

Too much Tanuki, Tengu and Oni. Miyoi (the main character) barely does anything, and as a slice of life it fails miserably in giving lesser known character the opportunity to shine. The only exception was Sannyo but even she was completely forgotten after a while.

I really wish there was more art from Aki Eda, either official or doujin. Her style is so expressive, cute, and simple all at once, it really captures that dreamlike Gensokyo feeling better than anyone else.
